香港是人均食肉量全球最高的地方,人均每日進食664克肉,約等同2塊10安士牛扒。豬和牛是消耗量最高的肉類,而港人人均「耗肉量」為英國人的4倍之多。許多人還未意識到肉食對環境及健康的影響。其實每星期素食一天,我們便可以減少碳排放及降低引起某些疾病的機會。
世界衛生組織已將加工肉列為「一級致癌物」,對人體有明確致癌性,而紅肉為「2A級致癌物」,有一定致癌性。世衛更估計每日進食50克加工肉(即少過兩塊煙肉)罹患大腸癌機率增18%。
畜牧業利用抗生素催谷動物生長、預防及治療疾病。濫用抗生素令細菌產生抗藥性,而這抗藥性可經進食肉類時傳遞至人類,令疾病難以治療,引致更高的發病率,甚至死亡率,大大提高醫療成本。
素食是「2015 – 2020 美國人的飲食建議」中所提議的三個健康飲食方法之一。
美國癌症研究學院提倡以蔬食為主的餐單,建議美國人三分之二的膳食由蔬果、穀物和豆類組成。
與肉食者相比,素食者患上某些疾病的風險較低,包括冠心病、二型糖尿病、高血壓、某些癌症及肥胖。
